Oreo Stuffed Chocolate Chip Cookies

Ingredients:
1 Cup (2 sticks) softened butter
3/4 Cup packed light brown sugar
1 Cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
3½ cups flour
1 teaspoon salt
1 teaspoon baking soda
2 Cups semi sweet chocolate chips
1 package double stuffed Oreo cookies

Directions:
-Cream butter, brown sugar, and sugar
-Add Eggs and vanilla
-Mix flour, salt, soda and add to wet ingredients and add chocolate chips
-Form balls with dough
-Place one ball on top of an oreo and another ball on the bottom
-Seal edges together by pressing and cupping in hand until oreo cookie is fully enclosed in dough
-Bake at 350 degrees for 13 minutes

A special visitor

A couple weekends ago my cousin Trey had a basketball tournament in Omaha, NE. I didn't have to work that Saturday so I headed to watch him play. I had a blast seeing my family! After Trey's basketball game we went and ate at a place called PepperJax Grill. Then, I had this brilliant idea..Eli should come spend the night at my house!
So, I had a surprise for Brent when I got home that evening. We had a slumber party at our house. We spent our evening playing with Archie (his stuffed dinosaur), eating pizza, eating M&M's, watching the movie Cars (funny story about that later), playing football (in the house), and a bath withs LOTS of bubbles!
The next day we all (Brent, Eli and myself)headed back to Omaha to watch Trey's team play again. This was the first time Brent and I have been able to see the Hardy family since Christmas! After the tournament they came to Avoca to see our house. And of course to meet Wrigley.
Eli wasn't a big fan of Wrigley unless Brent was near. I guess I wouldn't be either if I was eye level with a dog! Eli would constantly ask us "He eat me??" and we said "no!" then he'd ask "He eat my shoes"...and we had to reply with "Well, maybe" haha! Oops, that didn't help the situation! But Eli did give Wrigley a "treat" by throwing it at him! But, it got the job done, Wrigley enjoyed the treat!

This is how Eli thought he would pet Wrigley. He felt much better about petting him when there was a glass door between the two of them.


Eli insisted of giving Wrigley a kiss so I had lip prints all over my door.

In other news, I'm having one of those days I'm not happy, not sad, just kind of blah. Do you ever get those days? I am feeling sorry for myself because I want to be pregnant and two girls whose blogs I follow have been fighing PCOS and endometreosis both found out they were pregnant with twins. Man, I wish I could say those words. I wish that was our story, but our time will come. I am very happy for both of those girls! They deserve it and were such an inspiration to me and I will continue to follow their blog now that its all about being pregnant instead of being infertile! But, when I am in need of some encouragement

Hope everyone had a good start to their week. I just love when Monday's are GONE since I don't work on Tuesdays! :)

Eli: Mater is brown like my dad
Me: Yep, are you brown?
Eli: Yep Me: Is Trey brown?
Eli: Yep Me: Is your mommy brown?
Eli: Nope, she's yellow..
Brent and I both about died laughing! He was DEAD serious! Gotta love him.

T-Shirts

For the longest time Brent and I argued about all his t-shirts that he still had. I mean we're talking t-shirts from 4th grade when Brent went to state wrestling for little kids. Anyhow, these tubs were piling up in our basement or he thought he could still wear them. Finally, I had him convinced we needed to do something with them or his mom could store them.

I decided I wanted to make him a t-shirt quilt for Christmas 2010. Ok, so that didn't happen. This winter my mother-in-law and I went to the fabric store to get ideas on how we were going to make this quilt for his birthday, since Christmas had came and gone we decided it could be for his birthday. I also had plan that she was going to teach me how to sew. HAH!!!

Me learning how to sew didn't happen when I tried to help just pin the fabric for the curtains she made for our kitchen. SO, my wonderful mother-in-law decided she would sew it and she would give it to Brent for his birthday from her. At least I came up with the idea right?

Well, it took her a little longer that she expected and its only a month late (not too bad if you ask me).

20 t-shirts later (we still have a TON at our house but its better) Brent has his t-shirt quilt. This quilt took up the entire floor on our family room. He informed me he'd like to hang it on the wall. Nice try! Snuggle up with it Brent and enjoy it!!!




These t-shirts are only from before college. Next project will be all his Central College t-shirts on a quilt. Maybe this time I'll actually learn how to sew!

Vegetable Dip

Since most veggies are zero points on the new Weight Watchers Points Plus, I have stocked up on veggies. However, I love to dip my veggies in ranch or some sort of veggie dip. This works great for my snack in the afternoon, and tastes GREAT!!


3 servings 1/3 c. each 1 point
1 small carton low-fat cottage cheese
1 packet Hidden Valley Dip Mix
1 packet artificial sweetener
Mix in the blender. Chill.
